The Dorm Room Guide to Thanksgiving Cooking

This year, no one quite knows what Thanksgiving will look like. Will you be spending it with family, or will you be quarantined in your dorm? Who knows! However, it is certain that you want to eat your holiday favorites!

Unfortunately, you may not be quite sure how to make them. Have no fear, these recipes will give you some of favorite holiday tastes at a reasonable price. Whether you are a novice chef, or a curious foodie, these recipes will help you woo your family, friends, and roommates. Or you can just make them for yourself, if you’d like to meal prep!

Slow Cooker Chicken and Stuffing

When you think of thanksgiving food, chances are you picture turkey and stuffing. These two specific ingredients seem synonymous with the holiday for a good reason: they are not easy to make year-round! A turkey cost $30 and you must labor over it for hours, if not days, before it is ready to eat. And is stuffing really quite right outside of this concept?

If you ever have this culinary craving, this slow cooker chicken and stuffing dish is here to satisfy. It packs in all the holiday flavors with none of the holiday hassle. It also should not cost you more than about $8 to get wrangle all these ingredients up and it makes 6 servings.

Ingredients

  • 2 boneless chicken breasts
  • 1 box of stovetop stuffing mix, 6 oz
  • 1 can cream of chicken soup, 10.5 oz
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • (Optional) Chives

Directions:

Step 1 – Mix one can of cream of chicken soup, one cup of chicken broth, and the box of stuffing mix in one bowl until thoroughly combined. Feel free to customize this stuffing mixture with your favorite veggies, like celery, bell pepper, and onion!

Step 2 – Season Chicken breasts with a teaspoon of salt and pepper. Place chicken in slow cooker.

Step 3 – Place stuffing mixture on top of chicken.

Step 4 – Set slow cooker to high for 2-3 hours, until chicken is easy to pull apart.

Optional Step – Garnish with Chives. This is not necessary, but it will make your guests go “oooh, fancy,” and that is worth the price of admission.

Green Bean Casserole

Green Bean casserole is everyone’s favorite side dish, and it takes approximately 5 minutes to make. It is the quintessential “just throw stuff together” food of the holiday season. While everyone is familiar with green bean casserole, this slightly upgraded take on the formula is super satisfying and sure to impress more than the same old same old.

Ingredients:

  • 2 cans of green beans
  • 2 cans of cream of mushroom soup
  • 2 and a half cups of shredded Colby jack cheese
  • 2 strips of bacon
  • 2 and a half cups of French-fried onions
  • 1 teaspoon of pepper

Directions:

Step 1 – Cook bacon strips until done and crispy. Cut into bits and set aside.

Step 2 – Add green beans, cream of mushroom soup, bacon bits, pepper, half a cup of French-fried onions, and half a cup of shredded Colby jack cheese to baking pan. Stir together.

Step 3 – Top casserole with 2 cups of shredded Colby jack cheese.

Step 4 – Pre-heat oven to 350 degrees Fahrenheit. Once heated, bake casserole for 15-20 minutes, until thoroughly heated and cheese is melty.

Step 5 – Top with two cups of French-fried onions.

Roasted Carrots

These carrots are super simple to prepare and they add a sweet and fresh counter to the savory of the other items in this blog. This dish takes less than 10 minutes to put together and costs less than $1 per serving.

Ingredients:

  • 2lb Bag of Carrots
  • Olive Oil
  • Salt
  • Pepper

Directions:

Step 1 – Wash and peel carrots.

Step 2 – Cut carrots into chunks that are around the same size.

Step 3 – Toss carrots in 3 teaspoons of olive oil and two teaspoons of salt and pepper. Arrange evenly on cooking sheet.

Step 4 – Pre heat oven to 425 degrees Fahrenheit.

Step 5 – Bake carrots for 30-50 minutes, until a fork can pass into them easily.
